Peanut-Crusted Chicken

Peanut-Crusted Chicken is a variation of a popular Asian dish — peanut pork. This recipe is high in protein, low in fat, and gives you a dose of resveratrol with its crunchy peanut coating.

  • 4 boneless, skinless chicken breast
  • 1 cup salted peanuts
  • 2 tbsp. canola oil
  • 4 tbsp. honey



Step 1

Using a blender or coffee grinder, reduce the peanuts to a coarse mixture.
Do not over grind or you will end up with dry peanut butter.

Step 2

Lightly salt and pepper the chicken breast fillets and brush on a coating
of honey for binding and flavor. Place the chicken in the coarsely
chopped peanuts and press the coating into the chicken with the back
of a tablespoon.

Step 3

Stove Top

Coat a deep frying pan with the canola oil and heat on high. Place the chicken
in the skillet, reduce heat to medium, and cook until golden brown, 30 to 45 minutes.


Bake the fillets at 350 degrees for 45 minutes or until crusty brown on top.

Slice and serve piping hot as an entree, or serve it with your favorite dipping sauce as an appetizer.
